Simply Chicken Soup
1/2 medium onion or whole small onion (spring onions… mmmm)
2 carrots, scrubbed and cut in thin circles
2 stalks of celery, chopped
1 lg clove garlic, crushed
olive oil
salt and pepper
3 cups cooked, cubed chicken or turkey
2 cups dry pasta, cooked (we like Tinkyada spirals for soup)
Herbs, if you like: summer savory, parsley, bay

Pink Pancakes
1 med beet, cooked and then mashed or pureed
1 egg
3/4 cup liquid
1 1/4 cups flour (I used 3/4 rice, 1/4 tapioca and 1/4 potato)
dash of salt
1 tsp baking powder
