Risotto with Fiddleheads and Morels
gluten-free, dairy-free, soy-free, corn-free, peanut-free
1 cup (about 1/4 lb) fiddleheads, stems trimmed, blanched
about 1 cup morels (I used 1/2 oz. dried morels – soak morels for about an hour, squeeze excess liquid, chop morels and reserve soaking liquid)

The surgery went off without a hitch and I’m home healing. I was super nervous going into it, mostly I was pretty tweaked about going under and having a tube down my throat, but in the end it all went very smoothly.
